Ronco Pitotti Giallodi IGT Magnum 2019

The yellow Tocai variety was accidentally rediscovered by Vignai da Duline in the Ronco Pitoti vineyard (Eastern Hills of Friuli) where it had been overgrafted. There are currently 900 strains. The grapes are vinified in the absence of sulfur dioxide and with pre-fermentation maceration on the skins without temperature control. A soft pressing with cold settling follows. The alcoholic and malolactic fermentations are completely carried out. The Giallo di Tocai is aged in 250-liter barriques resting on the yeasts for 11 months before bottling. Only 160 bottles produced.
