Pure Aleatico. The grapes are harvested slightly overripe, partially destemmed and spontaneously fermented in open French oak vats. Two months of fermentation in contact with the skins. This is followed by approximately two years of ageing in small 700-litre barrels. No clarification, filtration or stabilisation and no use of chemicals throughout the vinification process. A very fragrant and elegant wine.
