Wine-making: after a careful selection, the grapes are crushed before undergoing the traditional-style fermentation on the skins in stainless steel tanks at a temperature of 28 °C. After some days the wine is separated from the skins and seeds, and several rackings are performed over the following months to obtain a clear, clean product.
Ageing: it matures in stainless steel tanks – ageing in bottle 6 months
Colour: ruby red with garnet red after ageing
Aroma: fruity when it is young, harsh after ageing with blackberry, jam, spice and toasted fragrance
Flavour: full and harmonious with soft acidity that highlights the fragrance and the freshness of this wine, it is suitable for modern drinking
Matching: it is a fine match for savoury soup (onions and legumes),volatile in savoury sauces, red meats, eel, dried cod and stockfish, seasoned cheeses.
