This pure Nerello Mascalese is a blend from our 3 highest vineyards (Vigne Alte): Tartaraci, Monte Dolce, Pettinociarelle. It expresses beautifully the value and precision of the old vines, ungrafted Nerello Mascalese on the high terraces in the Northern valley of Mount Etna. The most Burgundian of all Cornelissen`s crus.
Fermentation: starting with a “pied-de-cuve” using only indigenous yeasts and skin contact for about 60 days
Aging: In neutral epoxy tanks from 1500 liters to 2500 liters
Filtering: Before bottling with cartridges of 5 micron
Annual production: 2.000 bottles
