Valpolicella Superiore Ripasso DOC 2016
Certified organic. This baby Amarone packs a mighty punch.
A blend of traditional Valpolicella grapes; Corvinone, Corvina, Rondinella, Oseleta, grown 450m above sea level on a 13 hectare vineyard near Mezzane, in the east of the Valpolicella region.
A harsh terroir of poor, rocky yellow marl soil on steep glacial slopes produces grapes with characteristic mineral flavours which were entrenched into the land as the ancient glacier melts.
Ruby red color with tints of purple. On the nose, aromas of fresh black cherries, spices are particularly prominent. Flavoursome with good acidity, the palate is filled with the taste of cherries and plum jam as black pepper and rhubarb.
This wine goes through a second fermentation period which allows it to soak up all the rich tangy Amarone flavours as it passes through dried Amarone grape skins.
Food Pairing: Roast pork, crispy pork belly, Ossobucco, wild boar, Pata Negra, spicy salami, Seranno and Parma Ham.
