The aromatic wine spent a year aging on the lees in bottle and was left to rest for eighteen months after disgorgement, allowing the wine to develop complexity and finesse. Spontaneous fermentation, and bottled unfined and unfiltered, with no added sulfur.
Vivid gold color in the glass. Aromas of wildflowers, and a pleasant bitterness on the finish.
