The town of Oeuilly features a small plot called Les Sables, famed for its sandy, phylloxera dissuading soils. Thanks to this unique factor, own-rooted massale Chardonnay was planted here in 1962. The grapes were direct pressed into barrel for fermentation. The wines low pH and cool cellars prevent malolactic conversion.
