A wine that screams out the tradition of re-fermented wines in Emilia. It is made from red grapes, but there are also white grapes inside. After manual harvesting of the grapes, fermentation takes place spontaneously in cement tanks, with a second refermentation in the bottle. No clarification or filtration and negligible addition of sulphur dioxide before bottling. It matures two years on the lees. A fresh and taut wine, pleasant and refreshing, with hints of wild strawberries and bread crust.
