Harvest: by hand, with placement on racks for raisining

Fermentation type: with skins separated from stalks after raisining

Days of fermentation with skins: 30-40

Wine maturation at least 50 months in stainless steel barrels, then at least 12 months in the bottle, (before being put on sale)

Withering Method: on racks of Trasimeno reed, in naturally ventilated rooms

Withering Time: 3-4 months

Vinification Period: January-February

Main characteristics: sweet, with fruit aromas such as persimmon and flavours reminiscent of blackberries, prunes and dried figs.
